The blonde vs. the kitchen: Tagliatelle alla Boscaiola

As you already know, I am a big fan of pasta and I don't just love to eat it, I also love cooking it. So this
weekend I have decided to try one of my favorite dishes: Tagliatelle alla boscaiola. Yum! ^_^

Here is what you need:

- 200 g tagliatelle
- 1 tablespoon olive oil
- 1 onion, thinly chopped
- 2 garlic cloves, crushed
- 6 slices of bacon, thinly sliced
- 200g mushrooms, sliced
- 1/4 cup dry white wine
-  300 ml cream
- Grated parmesan, to serve

So let's get started:

- Cook pasta in a large saucepan of boiling, salted water, following packet directions, until just tender. Drain.

- Meanwhile, heat the oil in a deep frying pan over medium heat. Add onion, garlic and bacon. Cook for 3 to 4 minutes or until onion has softened. Add mushroom. Cook for 2 to 3 minutes or until just tender. Add wine. Cook for 1 to 2 minutes or until reduced by half. Add cream. Reduce heat to medium-low. Simmer for 5 to 6 minutes or until slightly thickened.

- Add pasta to mushroom mixture. Season with salt and pepper. Cook, tossing, for 2 to 3 minutes or until heated through. Spoon pasta into bowls. Top with parmesan and serve.
